Smashed Potato Salad

Ingredients
  

  • 3 lbs small golden potatoes
  • 2 tbsp olive oil
  • kosher salt and pepper
  • 1 cup Best Food’s or Hellman’s mayonnaise any works, but my mom insists on these brands
  • 1 tbsp dijon mustard
  • 1/2 cup green onion, chopped
  • 1/2 cup celery minced
  • 1/2 red onion, minced
  • 3 tbsp fresh dill
  • 1 tsp paprika
  • 1 tsp salt, plus more to taste
  • 1/2 tsp pepper, plus more to taste

Method
 

  1. Preheat the oven to 450 degrees
  2. Fill a large pot with water and add the potatoes and a generous pinch of salt. Bring to a boil and cook until potatoes are soft, about 20 minutes. Drain and let cool.
  3. On a large sheet pan, add a drizzle of olive oil. Add the potatoes and smash them down flat with a cup covered with parchment paper. Brush with more olive oil and season with salt and pepper.
  4. Bake for about 40 minutes, flipping halfway, or until golden brown and crispy.
  5. In a large bowl, combine mayonnaise, mustard, green onion, celery, red onion, dill, paprika, salt and pepper.
  6. Add the potatoes and toss to coat. Season with salt and pepper to taste.
  7. Serve warm, room temperature or cold!
