Skillet Enchilada

This is a one pot easy and delicious weeknight dinner
Servings: 4 people

Ingredients
  

  • 1 lb ground beef or turkey
  • 1/2 tsp each salt and pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 onion chopped
  • 1 tbsp minced garlic
  • 10 small flour tortillas cut into squares
  • 2 10 oz cans mild enchilada sauce
  • 1 cup shredded cheese
  • 1/2 cup shredded Colby jack cheese
  • sour cream

Method
 

  1. brown 1 pound ground beef in a large oven safe skillet over medium-high heat, add all seasonings, and the onion
  2. let that cook until beef is cooked through and inions have softened. drain any grease from the skillet
  3. add the minced garlic and the cut up flour tortillas. stir those around with the ground beef and two cans of mild enchilada sauce. add a handful of cheese and stir everything together well. top with some shredded cheese.
  4. place in oven at 400 degrees until the cheese is melted. top the plates with cilantro and sour cream. enjoy!
