Taco Soup

With chilly weather fast upon us, soup is a must have, especially this delicious Taco Soup. My best friend gave me this recipe many years ago. It’s actually the only soup my hyper picky eater daughter will consume! It’s an easy recipe, one pot and you usually have all the ingredients on hand. So it checks all my boxes!  I hope you enjoy!

Ingredients
  • 1 lb ground turkey or beef
  • 1 onion- chopped
  • 1 green pepper- diced
  • 6 cups (3 cans) beef broth
  • 1 can diced Italian style tomatoes
  • 1 small ( 8oz ) can tomato sauce
  • 1 can black beans, rinsed and drained
  • 1 cup frozen corn or 1 8 oz. can corn, I prefer half a bag of frozen veggie mix
  • 1 packet taco seasoning
  • Ground cumin- a couple shakes
  • Topping-
  • Sour cream (optional)
  • Shredded Cheese (optional)
  • Crumbled tortilla chips (optional
Instructions
  1. In a large soup pot, saute onion, green pepper and carrots. The add, broth, tomatoes, tomato sauce, beans and corn, let it get hot then add taco seasoning and ground cumin. While that simmers, brown meat until cooked through, drain then add to the pot and let simmer for about 10 minutes.
  2. Top with sour cream, cheese and tortilla chips! Yummy!
  3. *Note* I make mine in one pot. I brown the meat and then add the veggies and saute. After they are all sautéed I add the broth, tomatoes, tomato sauce, black beans. Once boiling I add the taco seasoning and cumin.
